Ingredients
1Acorn Squash
1TablespoonOlive Oil
1teaspoonCumin
2teaspoonSalt
3TablespoonCream Cheese (Whipped)
6OuncesFrozen Spinach
1teaspoonSalt
½teaspoonBlack Pepper
6OuncesShiitake Mushrooms
½HeadRoasted Garlic
4TablespoonsFeta Cheese
Instructions
Acorn Squash
Preheat oven to 375 degrees.Cut squash in half and scoop out seeds.
Rub ½ Tablespoon olive oil inside the Acorn squash and sprinkle ½ teaspoon salt and ½ teaspoon cumin on each half. Place in Oven and bake for 45 minutes or until a fork can easily poke into the squash.
Stuffing
In a saucepan cook the Spinach with ¼ cup of water, one teaspoon of salt, and ½ teaspoon of pepper. DrainSauté Mushrooms in ½ Tablespoon of Olive Oil. Toss in the roasted garlic.Let mushrooms and Spinach cool for 5 minutes or so.
Mix together spinach, mushrooms, feta, and cream cheese.
Stuffed Acorn Squash
Scoop stuffing into each squash half. Place squash back in the oven for 15 minutes or until the stuffing is heated and the cheese is nice and creamy.

Notes
if you don't have roasted garlic, you can substitute 1 clove of chopped garlic. Toss in with the Mushrooms
