Ok, we love meat!!! But Meatless Monday is so much fun. It's a great way to get our veggies and it challenges us to get creative with veggie dishes beyond just salads or steamed broccoli, which are our usual go-to's. A few years ago we discovered Acorn Squash and were pleasantly surprised to learn that it's actually edible. I mean, we never knew you could eat these squash. Our first Acorn Squash was roasted with feta cheese and it was a hit!! We still make it often, especially on the grill. We've expanded into stuffing Acorn squash and our turkey stuffed acorn squash and Chicken Stuffed Acorn Squash have become some of our favorite winter meals. Stuffed Acorn squash is now comfort food for us.

Stuffed Acorn Squash - Spinach, Cheese & Mushrooms
Since we love Meatless Monday, it wasn't hard to come up with the idea of a Stuffed Acorn Squash with Spinach, Cheese, and mushrooms recipe. Ever since we moved there are several things that make us excited when we go to the grocery store. And it is hard to get excited about going to the grocery store. It's usually a 2-hour event, even for the quick trips!!! Yes, we have to take the dogs, so that's 10 minutes just getting them in and out of the car, the grocery store is 25 minutes away. Right, there is an hour!!!! Anyway, we love that there are so many fish choices and awesome mushrooms. So yes the little things in life excite us.
Easy Recipe

Even meat lovers will enjoy the addition of Shiitake mushrooms, which add a great texture and flavor. Using cream cheese is a great way to reduce the amount of cheese needed while adding a nice creaminess to the dish. Give it a try!
TIPS:
- Use Cream Cheese - It cuts down on calories and adds a creamy texture to the stuffing. Plus, it adds a ton of flavor.
- Measure everything- It's surprising how much cutting ½ Tablespoon of Oil reduces the calories. I don't know about you, but that savings let me have a little glass of wine with dinner!!!!
Acorn Squash great for Meatless Monday
Ingredients
- 1 Acorn Squash
- 1 Tablespoon Olive Oil
- 1 teaspoon Cumin
- 2 teaspoon Salt
- 3 Tablespoon Cream Cheese (Whipped)
- 6 Ounces Frozen Spinach
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 6 Ounces Shiitake Mushrooms
- ½ Head Roasted Garlic
- 4 Tablespoons Feta Cheese
Instructions
Acorn Squash
- Preheat oven to 375 degrees.Cut squash in half and scoop out seeds.
- Rub ½ Tablespoon olive oil inside the Acorn squash and sprinkle ½ teaspoon salt and ½ teaspoon cumin on each half. Place in Oven and bake for 45 minutes or until a fork can easily poke into the squash.
Stuffing
- In a saucepan cook the Spinach with ¼ cup of water, one teaspoon of salt, and ½ teaspoon of pepper. DrainSauté Mushrooms in ½ Tablespoon of Olive Oil. Toss in the roasted garlic.Let mushrooms and Spinach cool for 5 minutes or so.
- Mix together spinach, mushrooms, feta, and cream cheese.
Stuffed Acorn Squash
- Scoop stuffing into each squash half. Place squash back in the oven for 15 minutes or until the stuffing is heated and the cheese is nice and creamy.
- Enjoy!!!!!
