An Unconventional Summer Pizza: Tuna and Corn

We know it may sound like an unconventional combination, but trust us when we say that this pizza is amazing! It features a spicy blend of garlic, sweet corn, tuna, olive oil, cheese, and a dash of crushed red peppers for an extra kick. The Tuna and Corn Grilled Pizza is a delectable mix of sweet and savory flavors that you won't be able to resist. It's one of our all-time favorites! 

Don't get us wrong, we love a classic pizza with pepperoni, Italian sausage, mushrooms, and plenty of cheese. But if you're looking for a pizza that's lower in calories and packed with summery flavors, this Tuna and Corn Grilled Pizza is sure to put a smile on your face. And if you don't feel like grilling, you can always bake the crust in the oven following the instructions. After all, it's the toppings that take it to the next level of deliciousness.

How did we come up with this recipe?

During Amy's school years, we lived in Tokyo, Japan, for a couple of years. Tokyo is a wonderful city, especially for children, as everyone is very considerate and it's a safe place. Amy had to travel by bus for over an hour each way to attend the American School In Japan. When she had after-school activities, she had to take the train home. I know it may seem like I was a bad mother for letting her travel alone, but it was not that bad. There were times when she was able to do things that I would not allow her to do in Raleigh, NC, where we moved back later. Nevertheless, she had a great time with her friends and discovered things like Moss Burgers, which is still one of the best hamburger places, according to her.

Amy and her friends found a pizza place a couple of blocks from our house. It's worth mentioning that all the kids had nannies, so they weren't wandering around the streets alone. They thought they were, but that's not the case. She told me that it had the best pizza in the world. I decided to let her order it for dinner. I remember the moment when the pizza was delivered, and it was a Tuna and Corn Grilled Pizza. The expression on my face was priceless! At least the beer guy delivered some beer that day, haha! But the first bite of the pizza won me over. I was amazed at how good it tasted. Also, it goes great with a nice cold Sapporo!

How we changed the Tuna and Corn Grilled Pizza

The original version of the Tuna and Corn Grilled Pizza had a sauce made of mayonnaise. Yes, mayonnaise! If you haven't tried Japanese mayonnaise, you have missed out on an amazing sauce. There are two types of mayonnaise that we fell in love with, one with a red cap and the other with a yellow cap. The yellow cap mayo has Wasabi in it, which gives it a nice and spicy flavor. Unfortunately, we have not been able to find the "yellow cap" mayo since we returned to the US. 

As a result, we decided to make a major change and eliminate the mayo altogether. For the new sauce, we sauté garlic (or use roasted garlic), peppers, and oregano in olive oil. This gives a unique flavor to the crust and reduces calories compared to mayo. We also used mozzarella and parmesan cheese because, after all, it is a pizza!

TIPS for Tuna and Corn Grilled Pizza:

  • This pizza can be cooked in the oven.  Just follow the package directions for cooking the dough.
  • It is important to measure the amount of olive oil you use, as it is easy to add too much and consume unnecessary calories. 
  • Measuring cheese is crucial, especially if you love it like I do. By measuring it, you can control the calories you're consuming. Adding sufficient herbs and spices can enhance the flavor of your food and help you eat a little more while still controlling your calorie intake. 
  • If you can't grill corn, you can use frozen or canned corn instead. Heat it up and add seasoning before topping your pizza with it. 
  • This pizza can also be cooked in the oven. Just follow the package instructions for cooking the dough.

A Few Things We Use

Everyone needs a Pizza Stone

Ingredients

  • 1 Pizza dough Use your favorite pizza dough
  • 3 Tablespoons Olive Oil
  • 2 Cups Corn Frozen or About 4 ears of corn
  • ½ Tablespoon Crushed Red Pepper Optional only if you want it spicy!
  • 1 ½ Tablespoons Roasted Garlic Cloves Or 3 Cloves Garlic
  • 1 Teaspoon Sea Salt
  • 12 Ounces Solid White Tuna Fish (Canned in Water)
  • 2 Ounces Mozzarella cheese Shredded
  • 2 Ounces Sharp White Cheddar Cheese Shredded
  • ½ Ounce Parmesan Cheese

Instructions

  • Heat 1 Tablespoon olive oil in a saute pan and add the corn

  • Add the crushed red pepper. This step is optional; only add peppers if you want it spicy.

  • Saute the corn for about 5 minutes.

  • If grilling pizza, place a pizza stone on the grill to preheat the stone. If baking in the oven, heat the oven according to the dough package directions (if using an oven pizza stone, preheat the stone according to pizza stone directions)

  • Combine either roasted garlic or crushed garlic with 2 tablespoons of olive oil.

  • Drain the tuna (We use white tuna in water).

  • To build a pizza, start by stretching out the pizza dough to fit the size of the pizza stone or pan that you will be using. We recommend using parchment paper under the dough for easier transportation and to prevent it from sticking to the stone. After that, spread the olive oil roasted garlic mixture evenly over the pizza dough.

  • Add the mozzarella and cheddar cheese to the pizza crust.

  • Add the cooked corn to the pizza.

  • Sprinkle on the parmesan cheese.

  • Grill until the cheese is melted and the crust is cooked to desired crispness, about 10 to 15 minutes. If cooking in the oven, bake until the crust is done and the cheese is melted according to the dough package instructions.
