I love vegetable soup! It's my go-to comfort food during the fall and winter seasons. I'd have it all year round if it weren't for the fun of grilling in warmer weather. Amy and I enjoy coming up with healthier versions of classic recipes without compromising on flavor. This time, we decided to create a fresh vegetable soup recipe with fewer calories. Our soup is packed with fire-roasted tomatoes, crisp green beans, sweet carrots, tender potatoes, and juicy sweet corn. The result is a warm, comforting bowl of soup that's both hearty and good for you.

This Vegetable Soup Recipe is full of flavor and, the best part, low in calories!!!!
It only takes about 10 minutes to prepare and 30 minutes to cook this soup. Also, it gets better when left overnight. To be honest, I was surprised that it could get better, I know Chili is better the next day, but vegetable soup. . .Really? But it turned out so good that we even had it for breakfast. I felt full throughout the day and warm all day long. It was a low-calorie breakfast, followed by some veggies for lunch, which made it easy for me to justify having a Gin and Tonic later that night.
Building flavor in soup.
When making chicken soup, we usually cook the chicken with the spices to enhance the taste. We decided to try this method with our vegetable soup recipe, too. So, we chopped the onions and potatoes and cooked them gradually with the spices to give the soup a rich flavor.
I have to say, the fresh carrots are a great addition to this recipe. I'm not a huge carrot fan, but adding them to this soup might have been the best thing ever. I think I see better already! Get it, carrots are good for eyesight. I know if you have to explain it's not funny.
What vegetables go in vegetable soup?
Add the broth to the potatoes, onions, and spices and cook together for about 3 to 5 minutes. Bring to a boil, then add the other veggies you love to the soup. I recommend adding carrots even if you don't like them. The flavor is so good, and there's that whole eyesight thing. Other great additions are corn, green beans, or peas. Also, frozen veggies work great and can save some time.

Healthy and Flavorful Vegetable Soup Recipe
A Few Things We Use
Ingredients
- 2 Large Russet Potatoes
- 3 Large Carrots
- 1 Large Onion
- 1 Tablespoon Olive Oil
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- ½ teaspoon Dried Oregano
- 2 teaspoons Cayenne Pepper Optional
- 1 teaspoon Salt
- 1 Tablespoon Bouillon Beef, Chicken, or Vegetable Bouillon
- 1 teaspoon Black Pepper
- 8 Cups Broth Beef, Chicken or Vegetable
- 14.5 Ounces Fire Roasted Tomatoes Canned
- 12 Ounces Frozen Corn
- 12 Ounces Frozen Green Bean
Instructions
- Chop potatoes into bite-size pieces.
- Chop carrots into bite-size pieces.
- Chop onion.
- In a large stock pot, add olive oil and onions. Sauté onions for a couple of minutes until they start to get soft.
- Add potatoes to stock pot with onions.
- Add onion powder, garlic powder, oregano, cayenne pepper (if using), salt, bouillon, and pepper to potatoes and onions.
- Saute for 5 minutes
- Add broth, fire-roasted tomatoes, carrots, corn, and green beans. Or add your favorite veggies at this point.
- Simmer for 30 minutes.
- Enjoy! This is good with saltine crackers or a piece of crusty bread.
