Ingredients

  • 2 Large Russet Potatoes
  • 3 Large Carrots
  • 1 Large Onion
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Dried Oregano
  • 2 teaspoons Cayenne Pepper Optional
  • 1 teaspoon Salt
  • 1 Tablespoon Bouillon Beef, Chicken, or Vegetable Bouillon
  • 1 teaspoon Black Pepper
  • 8 Cups Broth Beef, Chicken or Vegetable
  • 14.5 Ounces Fire Roasted Tomatoes Canned
  • 12 Ounces Frozen Corn
  • 12 Ounces Frozen Green Bean

Instructions

  • Chop potatoes into bite-size pieces.

  • Chop carrots into bite-size pieces.

  • Chop onion.

  • In a large stock pot, add olive oil and onions. Sauté onions for a couple of minutes until they start to get soft.

  • Add potatoes to stock pot with onions.

  • Add onion powder, garlic powder, oregano, cayenne pepper (if using), salt, bouillon, and pepper to potatoes and onions.

  • Add broth, fire-roasted tomatoes, carrots, corn, and green beans. Or add your favorite veggies at this point.
  • Simmer for 30 minutes.
