- 2 Large Russet Potatoes
- 3 Large Carrots
- 1 Large Onion
- 1 Tablespoon Olive Oil
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- ½ teaspoon Dried Oregano
- 2 teaspoons Cayenne Pepper Optional
- 1 teaspoon Salt
- 1 Tablespoon Bouillon Beef, Chicken, or Vegetable Bouillon
- 1 teaspoon Black Pepper
- 8 Cups Broth Beef, Chicken or Vegetable
- 14.5 Ounces Fire Roasted Tomatoes Canned
- 12 Ounces Frozen Corn
- 12 Ounces Frozen Green Bean
Chop potatoes into bite-size pieces.
Chop carrots into bite-size pieces.
Chop onion.
In a large stock pot, add olive oil and onions. Sauté onions for a couple of minutes until they start to get soft.
Add potatoes to stock pot with onions.
Add onion powder, garlic powder, oregano, cayenne pepper (if using), salt, bouillon, and pepper to potatoes and onions.
Saute for 5 minutes
Add broth, fire-roasted tomatoes, carrots, corn, and green beans. Or add your favorite veggies at this point.
Simmer for 30 minutes.
Enjoy! This is good with saltine crackers or a piece of crusty bread.
