1HeadCauliflowerMakes about 4 Cups of rice
1TablespoonOlive Oil
2teaspoonCumin
1teaspoonSalt
1Cup CilantroOr Parsley

Wash Cauliflower, Remove all the green leaves and stems. Cut Cauliflower into sections that will fit into the food processor or a size that is easy to hold if you are using a box grater.
Grate the cauliflower into the size of rice.
Add 1 tablespoon of olive oil to a large sauté pan and heat over medium heat. Add cauliflower rice and sauté for 5 minutes.
Season with cumin, salt, and pepper. The cumin is optional, we found it really enhances the flavor. It is also very good with garlic and/or onions.
Taste the rice to ensure it's seasoned to taste; remove from heat and add cilantro or parsley.
Serve and ENJOY!!!!!

This side dish is excellent with cedar plank salmon.
