A Twist on Grandma's Blueberry Cobbler Recipe

Ingredients

Blueberry Mixture

  • 3 Cups Blueberries Fresh or Frozen
  • ¼ Cup Sugar
  • 1 Tablespoon Cornstarch
  • ½ Lemon Juice and Zest

Cobbler Mixture

  • 1 Cup Cottage Cheese
  • 1 teaspoon Vanilla
  • ½ teaspoon Salt
  • 1 Cup Flour
  • ½ Cup Sugar
  • 2 teaspoon Baking Powder
  • 2 Tablespoons Butter Melted

Instructions

  • Preheat the oven to 350 degrees. Zest the lemon

  • Mix together the Blueberries, lemon juice, lemon zest, sugar, and cornstarch.

  • Place the blueberry mixture in an 8 X 8 casserole dish

Cobler mixture

  • Put the cottage cheese in a food processor.
  • Blending should only take a couple of minutes
  • Add the vanilla, salt, flour, sugar baking powder, and butter to the food processor with the cottage cheese. Blend together until all ingredients are mixed.

  • Spread the cobbler mixture over the berries.
  • Bake in a 350-degree oven for 40 minutes or until the cobbler is done. Use a toothpick to test if the dough is done.
