A Twist on Grandma's Blueberry Cobbler Recipe

Blueberry Mixture
- 3 Cups Blueberries Fresh or Frozen
- ¼ Cup Sugar
- 1 Tablespoon Cornstarch
- ½ Lemon Juice and Zest
Cobbler Mixture
- 1 Cup Cottage Cheese
- 1 teaspoon Vanilla
- ½ teaspoon Salt
- 1 Cup Flour
- ½ Cup Sugar
- 2 teaspoon Baking Powder
- 2 Tablespoons Butter Melted
Blueberry mixture
Preheat the oven to 350 degrees. Zest the lemon
Juice the lemon
Mix together the Blueberries, lemon juice, lemon zest, sugar, and cornstarch.
Place the blueberry mixture in an 8 X 8 casserole dish
Cobler mixture
Put the cottage cheese in a food processor.
Blending should only take a couple of minutes
Add the vanilla, salt, flour, sugar baking powder, and butter to the food processor with the cottage cheese. Blend together until all ingredients are mixed.
Spread the cobbler mixture over the berries.
Bake in a 350-degree oven for 40 minutes or until the cobbler is done. Use a toothpick to test if the dough is done.
