Ingredients
1PackagePie Shell SheetsWe used refrigerated pie shells
⅓CupBrown Sugar
½TablespoonCinnamon
1 ½PoundsGranny Smith Apples4 ½ Cups
½TablespoonLemon Juice
Zest from ½ lemon
½Tablespoonsugar
Caramel sauceWe used ice cream caramel topping (Optional)
Cool WhipOptional
Instructions
Bring the pie shell to room temp according to the package directionsWash apples, cut them in half, and remove the seeds/core
Cut apples into bite-size chunks
Mix together Brown Sugar, and Cinnamon. Add to sliced apple pieces. Mix together
Add Lemon Juice and zest to apples
Place apple mixture in a sauté pan. Cook until the apples get soft. About 5 to 10 minutes. Let cool to room temperature
Cut the pie crust into quarters
Add ½ cup of the apples to the pie crust. Place on the edge of the pie crust
Fold the pie crust over the apples and seal the edges by pinching with fingers
Press down the edges with a fork
Cut a little slit on top of the empanadas
Spray empanadas with Olive Oil or butter spray (or your favorite)
Place parchment paper in the air fryer and put the empanadas in the air fryer
Cook in an air fryer at 375 degrees for 7 minutes
Rotate in the air fryer. Cook for additional 5 minutes. (OPTIONAL: at this point spray with additional oil spray and sprinkle on brown or white sugar)
Cook until golden brown. Drizzle on some Caramel and some whipped cream

NOTE: If not cooking all the empanadas freeze them at this point. Place in zip lock bag and place flat in freezer
