Banana Bread: A Healthy and Delicious Treat

Ingredients

  • 3 Banana Use Ripe Bananas
  • 10 Dates Can be replaced with ¾ cup of sugar
  • ¾ Cup Low Fat Cottage Cheese
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 ½ Cup AP Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon

Instructions

  • Mash the Banana. Set aside

  • In a food processor, add the dates and ½ cup of water. Puree. It will make a paste.

  • Add the cottage cheese, eggs, and vanilla to the dates in the food processor. Blend for a couple of minutes until every thing is mixed together

  • Add the cottage cheese mixture to the mashed bananas
  • Add the dry ingredients to the cottage cheese/banans

  • Spray the loaf pan with cooking spray.

  • Add the dough to the pan

  • Bake at 350 degrees for 50 minutes. Check with a toothpick to see if it is done. If not, cover the bread with foil and bake for an additional 10 minutes. Check to see if done.
