- 3 Banana Use Ripe Bananas
- 10 Dates Can be replaced with ¾ cup of sugar
- ¾ Cup Low Fat Cottage Cheese
- 2 Eggs
- 1 teaspoon Vanilla
- 1 ½ Cup AP Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- 1 teaspoon Cinnamon
Get Recipe Ingredients
Mash the Banana. Set aside
In a food processor, add the dates and ½ cup of water. Puree. It will make a paste.
Add the cottage cheese, eggs, and vanilla to the dates in the food processor. Blend for a couple of minutes until every thing is mixed together
Add the cottage cheese mixture to the mashed bananas
Add the dry ingredients to the cottage cheese/banans
Spray the loaf pan with cooking spray.
Add the dough to the pan
Bake at 350 degrees for 50 minutes. Check with a toothpick to see if it is done. If not, cover the bread with foil and bake for an additional 10 minutes. Check to see if done.
