Blueberry Lemon Cheesecake Parfait

Ingredients

Blueberry Topping

  • 3 Cups Blueberry
  • 2 Tablespoons Sugar
  • 2 Lemons
  • Zest of 1 Lemon
  • 2 teaspoon Cornstarch

Cheesecake

  • 8 Ounces Whipped Cream Cheese
  • 4 Ounces White Stilton with Lemon Cheese or Blueberry Cheese
  • 14 Ounces Non-Fat Condensed Milk
  • 16 Graham Crackers

Instructions

Cheesecake Mixture

  • Use a Mixer to mix the Cream Cheese for 20 to 30 seconds.

  • Add Stilton Cheese to the Cream Cheese and mix for 30 seconds

  • Slowly add the Fat-Free Condensed Milk to the Cheese Mixture. Mix for 30 seconds. Set Aside

Blueberry Topping

  • Place 2 Cups of washed Blueberries and 3 Tablespoons of white sugar into the saucepan. Cook over medium heat until blueberries start to cook. About 3 minutes.

  • Turn the heat down to low. Add the lemon juice and zest to the blueberries. Blend together for 3 minutes.
    The sauce will be thin with a watery consistency. Mix together 2 teaspoons of water and 2 teaspoons of cornstarch. Add to the blueberry sauce. This will thicken the sauce.
    Place in the refrigerator for 5 to 10 minutes to cool
    Add 1 cup of blueberries to the cooled blueberry sauce.
    Set aside

Building Parfait

  • Crumble graham crackers and place them in the bottom of a parfait glass
    Add the cream cheese mixture on top of the graham crackers
    Then add the blueberry mixture
    A layer of graham crackers.
    Add a spoonful of cream cheese
    Crushed up graham crackers in a glass
  • Top with lemon cheese and top with a little graham cracker
