Chicken Brie Sandwich with Balsamic Glazed Cherry Tomatoes

- 1 Pound Chicken Breast
- 2 Tablespoons Dijon Mustard
- 1 Tablespoon Olive Oil
- 2 Cloves Garlic
- 1 Pound Cherry Tomatoes
- 1 teaspoon Sea Salt Or to taste
- 2 Tablespoons Fresh Oregano or ½ Tablespoon dry Oregano
- 2 Tablespoons Balsamic Vinegar
- 2 Cups Fresh Spinach
- 1 Tablespoon Adobo Seasoning
- 1 Large French Bread Crusty bread
- 2 Ounces Brie Cheese
To prepare for cooking, either preheat the oven or start up the grill. Cut the Brie Cheese into slices and allow it to come to room temperature for easier spreading. Slice the garlic and chop the oregano First, spread the Dijon mustard on the chicken breast. Then, evenly distribute the adobo seasoning on top.
To prepare the chicken breast, you can either bake or grill it until it is fully cooked. This takes around 15 minutes.
Heat the olive oil in a sauté pan. Once the oil is hot, add the sliced garlic and sauté it for a minute.
Add the tomatoes and salt to the pan. Sauté the tomatoes until they start to blister, which should take around 3 or 4 minutes. Next, add the oregano and continue to sauté for an additional 2 minutes. Finally, add the balsamic vinegar to the pan and mix everything together.
Cook on low heat for about 10 minutes until the sauce becomes thicker.
Remove the balsamic glazed tomatoes from the heat and allow them to cool for a few minutes
Add the fresh spinach to the balsamic glazed tomatoes and do not cook it any further. The spinach will wilt and soak up all the delicious flavors.
Hollow out the bread.
Spread the brie cheese on one side of the bread
Slice the cooked chicken and arrange it over the Brie cheese.
Place the balsamic gazed tomatoes on top of the chicken.
