Chicken Parmesan Sandwich

- 1 Pound Chicken Breast
- 1 Egg
- ¾ Cup Panko
- ½ Cup Grated Parmesan Cheese
- 1 teaspoon Oregano
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 2 Tablespoon Corn Starch
- 2 Ounces Low fat mozzarella Cheese
- 1 Cup Marinara Sauce
- Cooking Spray
- 2 Hoagie Buns
Mix together in a shallow bowl - Panko, Parmesan Cheese, Oregano, Garlic, and Salt. Beat one egg in a shallow bowl.
Cut Chicken Breast in half or wrap the chicken in saran wrap and beat it until it is about ½ thick. I like to use chicken tenders. Sprinkle cornstarch on the Chicken Breast. Dip the chicken breast in the egg.
Roll Chicken into the Panko mixture
Place Chicken breast into air fryer basket. Spray the breaded chicken lightly with olive oil Spray. Cook for 9 minutes in an Air Fryer at 400 degrees or 15 minutes in a 400-degree oven.
Flip the Chicken over. Spray with cooking spray. Cook for 3 to 4 more minutes in the air fryer and 5 minutes in the oven. Make Sure the chicken reaches 165 degrees.
Put ¼ cup of marinara sauce (or more if you like a lot of sauce) on each chicken breast.
Place ½ Ounce of cheese on each Chicken Breast. Melt Cheese in Airfry at 400° for 3 minutes to melt the cheese.
Remove the Chicken from the Air Fryer and place it on the buns.
Serve with your favorite wine and Enjoy!!!!
