Shrimp Marinade
- 1 Pound Shrimp
- 1 Lime
- 1 teaspoon Garlic Powder
- 1 teaspoon Cumin
Sauce
- 1 ½ Cups Lite Sour Cream
- 8 Ounces Monterey Jack Cheese
- 8 Ounces Diced Green Chilies
Sauté
- 16 Ounces Fresh Spinach
- 2 Tablespoons Olive Oil
- 2 teaspoons Salt
- 1 teaspoon Black Pepper
- 2 Cloves Garlic
Additional Ingredients
- 6 Ounces Colby Jack Cheese
- 6 Flour tortillas
Shrimp Marinade
Mix together the juice of one lime, garlic powder, and cumin
Pour marinade over the shrimp. Marinate the shrimp for 10 to 15 Minutes
Sauté
Heat 1 tablespoon olive oil, and add the garlic and salt. Sauté the garlic for 30 seconds.
Add fresh spinach and black pepper to the pan with the olive oil and garlic.
The spinach will cook down to about 2 cups. (takes about 3 - 5 minutes to cook) Remove from pan and drain the spinach.
Heat 1 Tablespoon of olive oil. Add the shrimp and marinade. The shrimp will take about 4 minutes to cook completely.
Once the shrimp are completely cooked. Remove from heat. Toss the shrimp into the spinach and stir in the Colby Jack Cheese
Build the Enchiladas
Preheat oven to 350 degreesDivide up the shrimp mixture into approximately 6 equal amounts. Lay a flour tortilla on a flat surface and spoon ⅙ of the shrimp-spinach mixture down the middle. Roll up and place seam side down into the baking dish. Repeat with the remaining tortillas. Pour the chile sour cream sauce over the enchiladas
Place the enchiladas in the oven. Bake for 20 minutes or until cheese is bubbling.
Garnish with Cilantro and Jalapeños
