Crispy Potato Skins with a Healthier Twist

Delicious, crunchy Potato Skins are easy to make at home! Create a healthier version of a favorite appetizer with less oil.

Ingredients

  • 3 Russet Potatoes
  • 1 Tablespoon Olive Oil
  • ½ Cup Cheddar Cheese Or use your favorite melting cheese
  • 4 Tablespoons Bacon Bits
  • 4 Tablespoons Low Fat Sour Cream
  • 4 Tablespoons Green Onions Chopped
  • 1 Tablespoons Serrano peppers Optional

Instructions

  • Preheat the Oven to 375 degrees. Wash Potatoes and poke holes in Potatoes with a fork. Rub Olive Oil on the Potatoes. Place Potatoes on a baking sheet. Bake for 60 Minutes.
  • Let the potatoes cool for at least 10 minutes when they are done. (Trust me, if you don't cool the potato, you will burn your hands!!!!). Cut the potatoes in half-long ways.
  • Scoop out the majority of the inside of the potatoes. Leave a small layer of potato in the shell.
  • Spray a small amount of cooking spray on potato shells. Place skins in an Air Fryer and cook for 10 minutes at 375 degrees. Check to see if the skins are crisp; if not, cook for an additional 2 minutes and check again. Repeat until the potato skins are crispy to your preference. If you prefer to use an oven, place the skins upside down on a baking sheet. Bake at 375 degrees for 10-15 minutes or until crispy.
  • Place 2 Tablespoons of cheese in each half of the potatoes.
  • Add 1 Tablespoon of bacon bits to the cheese.
  • Heat in a 375-degree air fryer or oven until cheese is melted, about 5 minutes. Sprinkle with green onions Or your favorite toppings.
  • Serve with Sour Cream and Peppers. Enjoy!!!
