Low Fat Homemade Ramen Soup Recipe

This Homemade Ramen Soup recipe is quick easy and loaded with fresh flavors topped with Chicken or Pork to make a satisfying dinner or lunch.

Ingredients

Chicken Or Pork

  • 1 Pound Chicken breast or pork loin Cooked chicken or pork loin

Mushrooms

  • 5 Ounces Shitake mushrooms About 12 large shitake mushrooms
  • ½ Tablespoon Sesame oil
  • ½ Tablespoons Fresh ginger
  • 2 Cloves Garlic
  • 3 Tablespoon Sherry
  • 1 Tablespoon Soy sauce

Toppings for Soup

  • 4 Green onions
  • ½ Cup Cilantro
  • 1 Tablespoon Thai peppers Optional

Broth and Noodles

  • 32 Ounces Chicken broth
  • 3 Cup Water
  • 2 Tablespoons Chicken bouillon
  • 9 Ounces Udon noodles Or Ramen noodles

Instructions

Chicken Or Pork

  • Use leftover chicken breast, rotisserie chicken, or pork loin/chop. The chicken and pork must be cooked. But there is no need to heat up.
    Cut the Chicken or Pork into strips or small bite-size chunks. Set aside
    If using raw chicken breast. Cut the chicken into bite-size chunks. Place in Saucepan. Sprinkle on 2 teaspoons adobo seasoning and 2 teaspoons bouillon. cook until the chicken is done. don't worry about the seasoning that sticks to the bottom of the pan.

Mushrooms

  • Heat Olive Oil in Sauté Pan.

  • Add Garlic and Ginger. Sauté for 30 seconds. Add Mushrooms.

  • Sauté Mushrooms until they start getting soft. Add Soy Sauce and cook for 30 seconds.

  • Add Sherry and Sesame Oil. Cook over medium heat until the liquid has evaporated.

Chicken Broth and Noodles

  • Heat chicken broth, water, and chicken bouillon to a boil.
    Add Noodles to the broth. Cook according to the package instructions. (chicken and pork can be added at this point or wait to add to the top)
    Homemade Ramen

Veggies for Top of Soup

  • Chop green onions, cilantro, and/or Thai peppers

  • Put Broth and Noodles into bowls
