Sesame Peanut Pasta Salad

Instructions

Linguini

  • Cook Linguini according to the box. (Make it al dente)
    Reserve ¼ Cup of the pasta water
    When Pasta is done. Drain it and rinse under cold water to stop the pasta from cooking

  • Toss ½ Tablespoon Sesame Oil onto the Pasta.

Veggies

  • Cut Cucumber into bite-size pieces

  • Grate Carrots (these can be purchased grated also)

  • Parboil the Peas for one minute. Drain Peas and run them under cold water for a minute to stop them from cooking

  • If including Chicken Cut it into bite-size pieces

Sauce

  • Mix together Soy Sauce, Sugar, Peanut Butter, Sesame Oil, Rice Vinegar, and OPTIONAL Pepper flakes (cayenne Pepper)

  • Add 2 Tablespoons of Pasta water into the Sauce mixture (or hot water if you forgot to save the pasta water). The consistency should be smooth and about the thickness of a salad dressing. Add additional water if you want the sauce thinner.

Making Salad

  • Toss together the veggies and linguini (and chicken if included in the salad)

  • Mix in half the Sauce

  • Taste, and add additional sauce until it has the constancy and taste you love. We used all the sauce.

  • Place in serving dish and top with Scallons . . . ENJOY!!!!
