Grate Carrots (these can be purchased grated also)
Boil 2 cups of water. When the water starts to boil add peas. Par Boil for ONE (1) minute. Drain Peas and run them under cold water for a minute to stop them from cooking
Sauce
Mix together Soy Sauce, Sugar, Peanut Butter, Sesame Oil, Rice Vinegar, and OPTIONAL Pepper flakes (cayenne Pepper)
Making Salad
Toss together the Veggies
Mix sauce into the Veggies
Place in serving dish and top with Scallions (Green Onions). . . ENJOY!!!!
