Sesame Peanut Zoodles

This cold Zoodles salad is a perfect blend of sweet & spicy. Loaded with fresh crunchy veggies. ginger, peanut, and soy sauce perfectly coat the zoodles

Ingredients

Veggies

  • 1 Large Zucchini Appx 6 Cups
  • 1 Large Carrot Appx 1 Cup Shredded
  • 1 Cup Frozen peas

Optional ingredients

  • 3 Scallions (Green Onions)

Sauce

  • ¼ Cup Soy Sauce
  • 2 teaspoon Sugar
  • ½ Cup Peanut Butter We used Crunchy Peanut Butter
  • 2 Tablespoon Sesame Oil
  • 1 Tablespoon Rice Vinegar Or White Vinegar
  • 2 teaspoon Pepper Flakes Optional

Veggies

  • Shred Zucchini (or buy already shredded Zucchini)

  • Grate Carrots (these can be purchased grated also)

  • Boil 2 cups of water. When the water starts to boil add peas. Par Boil for ONE (1) minute. Drain Peas and run them under cold water for a minute to stop them from cooking

Sauce

  • Mix together Soy Sauce, Sugar, Peanut Butter, Sesame Oil, Rice Vinegar, and OPTIONAL Pepper flakes (cayenne Pepper)

Making Salad

  • Toss together the Veggies

  • Mix sauce into the Veggies

  • Place in serving dish and top with Scallions (Green Onions). . . ENJOY!!!!
