Sweet Potato Hummus

This sweet potato hummus has a sweet spicy flavor. It goes great with carrots, naan, pretzels, or, super good, with a cinnamon sugar bread.

Ingredients

  • 1 Large Sweet Potato 12 Ounce potato
  • 1 Can Chick Peas
  • ¼ Cup Tahini
  • 2 Cloves Garlic
  • 1 Lemon Juice of one lemon
  • ½ Zest of Lemon Zest of half a lemon
  • ¼ Cup Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Cinnamon
  • ½ teaspoon Cayenne Pepper Optional only if you want some spice
  • 3 Tablespoons Water

Instructions

  • Peel Sweet Potato and cut into ½ in chunks. Place in a sauce pan and cover with water and add ½ teaspoon sea salt. Bring to a boil and cook until sweet potato is soft about 3 to 5 minutes.
    Add all ingredients into a food processor

  • Mix until all ingredients are chopped finely and the hummus is creamy. Serve with Carrots, naan or crackers
