Zesty Chicken Kabobs might be my favorite way ever to have chicken!! Well, I still love roasted chicken, fried chicken, grilled chicken, baked chicken, etc. But hey, these chicken kabobs have moved into "some of the best ways" to make chicken. Sometimes chicken breast can be boring but this chicken had so much flavor and was so moist. Oh, and I almost forgot the best part.... it was EASY to make!!! 😀
So, how easy is it?
I think there's really nothing better than an easy meal that ALSO has great flavor and maybe a little spice. A Trifecta! These grilled zesty chicken kabobs made our taste buds very happy! We used chicken breast to keep the calories down. Chicken thighs could also be used. I have to say, we very seldom have chicken thighs just because of the additional calories. Chicken thighs used to be one of my favorites to cook, just because of all the flavor and how easy they are to prepare. (It's hard to cook a chicken thigh so much that it is dry.) Not to worry, this recipe may use chicken breast but the chicken stays just as juicy and flavorful because of the marinade.
Marinade
The marinade infuses so much flavor into these chicken kabobs. The chicken should marinate for at least one hour and up to 4 hours. Blend together all the ingredients in a food processor. We like to use the small food processor like this one: KitchenAid 3.5-Cup Mini Food Processor
It's a really fun marinade and is almost like a paste. Since we used a purple onion, it turned the marinade pink! And yes real men can eat pink food!!! 😆
There is nothing more satisfying than a delicious meal that’s also super easy. These chicken kabobs will have everyone happy and asking for more.
NOTE:
We know it's fun to make kabobs with chicken and veggies on the same skewer. They look cool and it does help make the chicken look a little better. We aren't big fans of chicken and veggies marinating together. I really don't like to put chicken and veggies on the same skewers since both cooks at different temperatures. Plus, we like to use a different marinade for the chicken than for the veggies. It's fun to have two marinades that complement each other! Chicken Kabob Tips:
- Cut the chicken into bite-size pieces before marinating
- It's a little messy skewering the chicken. So the chicken can be placed on the skewers prior to marinating.
- If you don't want pink marinade use a white onion!
- Soak wooden skewers in water for at least 30 minutes. We usually add one tablespoon of salt to the water.
- Don't marinate chicken and veggies together.
- If grilling veggie kabobs place them on different skewers than the chicken.
Zesty Chicken Kabobs
A Few Things We Use
Ingredients
- 1 Chicken Breast (about 1 ¼ pounds)
- 2 Tablespoons Fresh Oregano (2 teaspoons dry oregano)
- 1 Lemon
- Zest one lemon
- 2 Cloves Garlic
- 1 teaspoon Salt
- ¼ Large Purple Onion (or one small yellow onion)
- 1 Tablespoon Olive Oil
Instructions
- Cut Chicken into bite-size chunksZest Lemon
- In a food processor place the Onion, Oregano, Garlic, Lemon Juice, Lemon Zest, Salt, and Olive Oil
- Blend until the mixture looks like a paste
- Pour the marinade over the chicken. (We place the chicken in a ziploc bag and pour the marinade over it. You could also use a bowl.)
- Cover the Chicken completely with the marinade
- Marinate the chicken in the refrigerator for at least one hour up to four hours
- Place the chicken on skewers (this can be done before adding the marinade)
- Place the chicken on the grill. Use tongs to rotate the chicken as each side is done. Will take about 3 or 4 minutes per side, depending on how hot the grill is.
- Flip the chicken to get a nice grill mark on all sides. Don't force the chicken to flip. When It's ready it will easily flip over with tongs.
- When the chicken is done serve it with your favorite sauce We used Tzatziki Sauce
