To get started, pick between having your sandwich on toast or soft bread. We like to keep things healthier without changing any flavors, so we don't grill the sandwich, and by not grilling, we can avoid using butter. To test out toast vs. bread options, we didn't toast the bread for the first sandwich but toasted the bread for the second. Turns out, I prefer toasted, and my mom prefers soft bread.

Add ½-1 Tablespoon of Thousand Island dressing to each piece of bread.

I know this sounds like a lot, but add a quarter cup to half cup of Sauerkraut to one piece of bread.

Add 3 or 4 ounces of corned beef to the other piece. You can add more corned beef if you want. Add an ounce of Swiss cheese.

Place under the broiler and cook until the cheese is melted. You'll want to watch the sandwich while it's under the broiler. They can overcook very fast. When the cheese is melted, remove from the oven and top with the other slice of bread/toast.
